A Boxty Limerick

I'm smitten with a Lassie, tis true

And to Irish cooking my true love is new.

But no Boxty did she serve

and I thought, “She's got a nerve!”

So I stormed right out, --- in a day or two.

*Boxty is a staple in Irish cooking. And there are several rhymes about it! Ones goes, “Boxty on the griddle; boxty on the pan. If you can’t make boxty, you’ll never get a man.”

How to make Boxty 

• 1-1/2 cups cold mashed potatoes

• 2 cups peeled and shredded potatoes

• 1-1/2 cups all-purpose flour

• 1 teaspoon baking soda

• 1 teaspoons salt

• 1/2 teaspoon pepper

• 1 to 1-1/2 cups buttermilk

• mix and blend into patties

• Oil for frying - skillet or griddle

I wonder if she got the message
never heard of a boxty and my wife's family hails back to Ireland!
We will have to look into this

Well there's an old saying which says, the way to a man's heart is through his stomach :) So your boxty limerick fits into that nicely. Never heard of boxty by the way and I've been to Ireland many times. Will check that recipe out Falcon.

They tell me that it is not just another potato pancake. It's all about the crispy crusty outside, soft in the middle. :)
