I learnt from one movie,
its not presenting style that you make food tasty, its the aroma that makes you to be eager to eat and of course display style and how you garnish makes a beginning taste to try the food. The spices are to be added one by one, to make them cook, and let the aroma fills the room. So making a mixed masala always spoils the taste when we add, and when you add separately the total taste blends with the curry, and when they are mixed altogether and grind, the reaction or mass transfer or molecule chain gives a different taste. I have seen in every country the spices are different, when you want to try variety, you need to experiment how and what the spice can taste and give to food when we add. In India cinnamon is used in curries, tea and Elaichi too, these two are added in sweets too. Its the solvent of curry that when they added gives taste too. We need to physically see what the taste and aroma of each spice, then you know where and when to add in the curry of which vegetables that go with. Today people not finding job doing restaurant business without knowing how to make food, and it just not bills that give you the fame, its the sustainability of the restaurant that makes you grow rich in money and winning the heart of people. I tried my home food making when i was pregnant at my 7th month, i was not working then i dont want to sit idle. There was a old man from Kerala his name was Jacob, he has high sugar so he asked me to make food free from salt and spices, i tried how is going to eat without salt, i used to add little salt and he used to see the difference that i added salt to the food, and then i thought he knows what he is eating, and stopped adding salt. There was another lady too who used to take food i made after working hours. I learnt without salt the food never gonna taste, and salt makes the flavor better. There are poems on salt, without salt food never going to taste better. So salt makes a special ingredient to food for foodies, and for patients its going to be poison, and for overweight and high BP old people salt should be light. Between chilli and masale spicy. Chillin makes taste to taste buds and burn tongue too, Masala like cloves makes thorat burn so you get chest burns, and chilli burns stomach too. So be choosy what type of spice you want to make for customers In telugu style of food they make chilli hot and for old people be careful with masala. I saw one english series, in that series, there was a lady who does food with much care, and she used to add flowers flavor to make the food tasty like vanilla flavor and she was adding so many other flowers to the food. Spices are the ingredients that adds extra taste to the food because you see the difference between spicy and non-spicy food. How fresh the vegetables and non veg meat are make the food taste, and chicken cut if you cook after a day taste will be different from the fresh cut you make curry. Similarly brinjal how soon you make the curry after you cut makes the taste, if keep it aside for hours the taste is going to be different and bitter. when i was in turkey when my flight got cancelled, i was in Marriot hotel, and the food i tried, i liked the plain rice how they made with salt and oil, was different i searched for recipe i couldnt find in youtube. Then i realized plain rice can also made tasty, with out chilies and vegetables as in pulao or fried rice. I tried Chinese food i dont like how they make chilli and sweet taste. I tried to make the noodles with indian spices and it was better than chow mei or maggie noodles. Then i realized foreign food can be made tasty with our style of making it. My x husband used to like my mushroom noodles, ever weekend he wanted me to make, that is only food he likes of my cooking, and he used to make food if he doesnt like my food. I tasted Punjabi food very spicy and spices blend much in the food, and i tried Gujarati, Tamilian food, everywhere i came to know home food tasted better than restaurant style, and it is true my mother makes nice, tasty food.
