I Cooked a dish
i have had in my head for six months
but never had the courage to do it

what was it?

Just seared chicken very thin slices
and a sauce of shallots with white chocolate
The trick is in balancing taste
its so hard between all these three items to place them together and create something delicate enough to feel good to your mouth

you need what is called a bridge something that brings the flavors together...caramelizing the shallots will help a little heavy cream or coconut nutmeg...just a pinch and believe it or not white grapes...:)

but still i need to do this four or five times
i am thinking of making a sabayon
